Bangers and mash (with Irish Champ mash) and homemade onion gravy, followed by English Summer Pudding would be my ideal meal right now, even tho it's 105F in the shade here!
1. Using a mixer (blender) mix 8Oz of soft brown sugar with 8Oz of butter/margarine, until it is an even light colour throughout.
2. Add 5 eggs, mixing well after each one.
3. In a separate (large!) bowl mix together 5Oz of self raising flour, 5Oz of normal flour, 1Lb of dried mixed fruit, and 4Oz of cherries.
4. Fold in the butter/sugar/egg mixture to the flour/fruit mixture, and add 1 tablespoon of Black treacle.
5. Place in tin and cook for 1Hr 40Mins at 125 degrees Centigrade. (please adjust cooking time according to your oven, this temperature is for electric fan ovens)
6. To tell if it is done, poke a skewer through the middle. If it comes out clean, then it is ready.
