There is the Bonneville Shoreline Trail, along the foothills of the mountains. You can get some more info here: Bonneville Shoreline Trail (broken link)
Little Cottonwood Canyon is close, and there is some great hikes up Red Pine Trailhead, a little more than halfway up the canyon. Bells Canyon reservoir is nice also, but a little steep to begin with. The trailhead is a quarter mile south of the 9400 S. intersection on Wasatch Dr. The parking lot is on the east side of the road there, hard to miss. Here is more info:
