Personally, I'd go stark raving mad living in such an isolated place as Torrey, Boulder or Escalante, but they are all surrounded by absolutely breathtaking scenery, and I know a lot of people really like being out in the middle of nowhere.

as far as the san pete area goes, i'd say spring city is your best bet. it is small enough and pretty nice, but it is also an artsy town with a lot of more liberally minded people than other small towns.

i really like spring city; used to spend summer weeks there with my high school friend and his family in their summer home.

I'm also looking at relocating to the San Pete area - does the Ephraim/Manti valley get much overflow from the winter pollution along the Wasatch Front? I've noticed that I can see it as far South as Salina & Richfield, ugh!

OH, and Headin' West - If you're looking at Torrey, Boulder, and Escalante, you might consider Monroe. It's over in the Sevier Valley and fits many of your requirements. It's also has some nice conveniences:
Near to I-70 and I-15
Close to Richfield (less than 10 miles away) which has; WalMart, Home-Depot, and other "city" items, and a Snow College extension campus, which also offers Utah State Univ. Extension classes.
There are also Hot springs in Monroe.

And nearly as close to all of the outdoors & Natl/State Parks in the area (Zions, Bryce, Capitol Reef, etc). Just another town to look at...
