Where to begin...you can go to LDS.org to get a good primer. Mormon concentration in Utah would probably have to do with the fact that they settled the state due to, shall we say, unfavorable conditions in other states. This concentration has been diluted over time as other cultures, religions, etc. have relocated to Utah creating a more diverse population, yet still heavily weighted on the Mormon side--some communities more than others. There are Mormons pretty much everywhere around the world in some percentage or another, just maybe not as concentrated as here in Utah.
The religion teaches good and true principles, not that every member follows them. People are people. Just as with other groups, likes hang out with likes, and can thus unfortunately exclude or ostracize others without similar beliefs or ideals especially where large concentrations exist.
I know there are some strong feelings on both sides and I'm not trying to stir any emotions with my response, just trying to provide a simple answer to your question.

The theological responses to this question are appropriate to the religion forum, or better yet, answered by the website cited above or in person with LDS members themselves.
As for the Utah connection -- prior to 1847, most Mormons lived in the Northeast and Midwest. There were few if any Europeans in Utah at the time. The Mormons came to a desert to escape persecution they felt in the more populated East.

What exactly is the mormon religion?
Technically it is not a religion. It is a cult. However, since they are not asking their followers to drink poison Kool Aid or commit crimes, they are left alone and allowed to call themselves a religion. If you want the real answer, wait just a bit and I'll give you a real one. I have been waiting for this opportunity and will do my best to shed some light on the subject but it will take a little time. Check back soon for an answer to your question.

If you want to find out about the mormon religion there have been some good threads over in the Christian forums that might interest you. There are some not so nice ones too so watch out for the axes.

going with what dreameyes was saying, since it seems that roarkx here is about to tell everyone why we are a deluded cult, he probably ought to do it in the religion forum, not the state forum.
