I lived north of SLC for about 4 years...and just moved to Long Island. NYC and SLC are on two different planets. It's a great place to live but there are definitely things to consider. Since you are a year off...you have plenty of time to investigate. Please shoot me a PM if you have any specific questions. I loved my time in Utah...but have no issues being blunt about the challenges.

1. Laid back, arty, vegan-Moab area 2. laid back, back to the earth, arty, cheap housing, LDS but accepting of outsiders-San Pete County, particularly Spring City 3. Arty, somewhat laid back, vegan, moderately expensive (for Utah) housing but jobs available-Sugarhouse, Avenues, or Marmalade District (capitol hill area). Park City could fill the bill, but you must have a lot of money to live there. You could get jobs there and live in surrounding areas, get the flavor of the laid back lifestyle and go back to your "affordable shack".

It is still a relativly small town, but there seems to be a lot of building going on.
I don't think that the culture in Kanab, where they recently have tried to outlaw being gay, and have tried to require everyone to own a gun is really going to sit with the Vegan live-and-let-live lifestyle. That's a very strange recommendation.

I live in the Santa Clara which is pretty much attached to St George. The Weather is great if you like the dry heat in the summer which can go to 115+, which I do after moving out here 4 years ago from the DC metropolitan area. The scenery and national parks cant be beat and only being a little over an hour from Vegas if you get the big City blues its a quick trip. I personally love not having to deal with any large quanities of snow even though the winters are still rather cold.
