I work in the Human Resources department and will also have a bachelor's degree in HR in May. If my company matches me to a position in Canada (Toronto or Vancouver), what is the process that I will need to complete? What would I need to apply as for? Work visa? Residency?

If your company find a position for you in Canada they will likely do all the paperwork (sponsorship, etc..) it happens all the time. Usually you start with a work permit and then you will be granted Permanent Residence after a while.
Were are you located?
Finally, as a personal advice, be careful what you wish for....Canada (and in particular Vancouver) is not the land of milk and honey as many believe.
