I had a big potluck to attend & a big bag of hulled barley (whole grain not pearl). So I experimented, it turned out delicious, so I wanted to share it with you all.
First I soaked the barley covered with water over night in the frig. The next day I drained the water & cooked the barley at a ratio of 1 cup barley to 4 cups water. I brought the water to a boil then simmered 1 1/2 hrs. I then put the barley in a colander & rinsed with cold water to take off the sticky starch. The barley was then separated kernels.
I then added olive oil & vinegar to taste, pepper, dill, chopped red onions, grated carrots & chopped red peppers. Chilled overnight.
I will try this at the pot luck that I am planning!
