Looking for ideas for vegetarian sandwiches beyond peanut butter, bean burgers, and cucumber-tomato. Suggestions?

Really good recipe in Laurel's Kitchen for a chickpea pate. I know that's kinda beany . . . but it's yummy.

Another of my favourites is:

Lettuce, alfalfa sprouts, avocado and thinly sliced red onion, with mayo and a dash of fresh pepper.

I'm not vegetarian but I love a good olive, red/green pepper, red onion, mushroom, eggplant, and olive oil with Mediterranean seasoning sandwich.

Do you eat cheese?

I like provalone with roasted red pepper and spinach on toasted ciabatta.

Favorite vegan is grilled tempeh on toasted rye with saurkraut, spicy mustard, and dill relish.

If you are just tired of PB&J try to mix it up; try almond or cashew butters with apples for instance.

Put your favorite "stuff" (black beans, hummus, grilled eggplant, whatever...) in a whole-wheat or spinach "wrap" for something different.

Grilled veggie sandwich

I marinate - then grill eggplant, zucchini, red bell pepper, onions, garlic - put on favorite bread with or without cheese & condiments.

I always grill enough for more than one day - I may stuff a pita with falafels the next day - you can also make falafels ahead of time and heat as needed

Hummus - veggie wrap -- spread tortilla or flat bread with your favorite hummus and top with a salad of lightly marinated veggies - shredded cabbage, bell pepper, seeded cucumber, sweet onion, snow peas, sugar snaps would all be good -- before rolling up.

Could marinate veggies in Asian-inspried dressing, or with EVOO & lemon juice, salt, pepper, herbs. If you don't add tomato to veggie mix it keeps in fridge for a few days. Sometimes I add cheese to the wrap. Reading the above I'm now thinking green olives would be good in there too, but only with the oil & lemon dressing.

Falafel in a pita with chopped ripe tomato, pitted calamata olives, crispy lettuce, and drizzled generously with tahini dressing.

I used to live on those things in college. One of the roach coaches was a middle-eastern grill who used to make them fresh to order for us on the streetside.

Vegetarian:
Cold pizza> sliced fresh mozzarella with tomato and pesto sauce
Fried eggplant with mozzarella and marinara sauce

Vegan:
Mashed chickpeas with lemon juice and veganaise, topped with lettuce
Roasted red peppers, lettuce, black olives, tomato, sweet onion, and oil/vinegar
Japanese cucumber (marinated in sugar/ginger then liquid patted out) with veganaise + mustard
