My family usually does a very informal dinner on Christmas night, after all the festivities. This year they are making sandwiches but don't have any vegetarian options available. I'm not a strict vegetarian, but enjoy finding new veg meals and would like to share some of them with my family. I found a good tempeh wrap that I plan on making and will share the recipe as soon as I find it.
I recently had the most delicious sandwich of my life and it was some sort of marinated portobello mushroom with (I think) a soft spreadable cheese on it. Not sure. Anyway, I want to find a good portobello mushroom sandwich to make. Cheese isn't necessary. I'm looking for something to really stand out. Any ideas? Any favorites?
