The peanut butter spicy tofu turned out great! We had it on quinoa with stir-fried red peppers.

The falafel pie was delicious! I made a few minor changes. I chopped the cucumbers and tomatoes finely, and added a spicy curry to the yogurt sauce. Vegan yogurt has a "taste" that I'm not fond of. this took it away.

I also semi - pickled the cucumbers - salt them and let the sit for 15 minutes. Rinse. Add chopped dill and fresh parsley. With the crust, I found that the half cup of water did not begin to moisten the mixture to the extent that it would make a crust so I added more.

I also lightly oiled the pie plate so that the felafel crust would not stick. That worked out well.

It's something that we will make again and again. I also thought that it could be doubled and
made in 9 X 12 baking pan to serve more.

Really good, easy and satisfying.
