I thought so too! I actually had a cashew cream scallion sauce at Middle Way Cafe the other day that was so good - I've never had cashew cream before. I think I like it better than dairy!
I made enchiladas tonight that were excellent! I used the recipe for the cilantro/avocado cream sauce, but didn't have all the ingredients on hand for the rest of that recipe. So I made my "clean out the produce drawer" enchiladas using up the veggies I had. I sauteed red and green peppers, onions, and mushrooms. Then I combined rice, black beans and frozen corn. I made the enchilada sauce from the Vitamix cookbook. Then I used corn tortillas, and stuffed them with the veggie combination and rice mixture.
After baking the enchiladas I used the cilantro/avocado cream sauce on top.

Sounds delicious! I made chile rellenos tonight with huge poblano chiles. Delicious too.
The best success I have had is with no mild substitute at all. Every milk or cream substitute that I have used has curdled.
I make a very good cream of broccoli soup by blending some of the broccoli about half first after cooking in in Imagine no chicken broth, nutmeg, 1 garlic clove, and salt and pepper to taste. Then combine the blended part with the rest of the broccoli. For an even creamier soup, blend the whole thing. It is very rich tasty and creamy - with no fat and dairy.
I do the same thing with spinach and with squash, All are very good!
Wow! What a great recipe! They make this at a little cafe in Dixon, New Mexico called Zuly's.
