I thought so too! I actually had a cashew cream scallion sauce at Middle Way Cafe the other day that was so good - I've never had cashew cream before. I think I like it better than dairy!

Middle Way Cafe- what a fun spot! Organic Oasis & Sweet Basil are good too.

Sounds delicious! I made chile rellenos tonight with huge poblano chiles. Delicious too.

The best success I have had is with no mild substitute at all. Every milk or cream substitute that I have used has curdled.

I make a very good cream of broccoli soup by blending some of the broccoli about half first after cooking in in Imagine no chicken broth, nutmeg, 1 garlic clove, and salt and pepper to taste. Then combine the blended part with the rest of the broccoli. For an even creamier soup, blend the whole thing. It is very rich tasty and creamy - with no fat and dairy.

I do the same thing with spinach and with squash, All are very good!

Enchiladas Primavera

Cut zucchini, yellow, and calabasita squash into match stick size pieces.

saute with oil just until tender, add crushed tomato and thinly sliced onion to your liking. season to your liking.

Make a traditional tomatillo green sauce. Or use any sauce of your liking.

warm the corn tortillas in the sauce, fill with the squash, roll and top with more sauce.

I would not bake. microwave individual servings on a plate. Serve with traditional spanish rice, smashed beans, and a salad.

Wow! What a great recipe! They make this at a little cafe in Dixon, New Mexico called Zuly's.
