I always make a lentil loaf--I love lentil loaf! Gravy, stuffing, mashed potatoes, sweet potatoes, a good salad, pumpkin pie. I really like the traditional spread. All of Stove-Top stuffings have meat in them, by the way.
I recently made a lentil loaf-like dish using a recipe out of Passionate Vegetarian by Dragonfly Crescent (or is Crescent Dragonfly?). Anyhow, the recipe had you puree the lentil and mushroom mixture and it was baked in individual ramikins. It was very good and more moist than my usual loaf recipe. I might do that for Thanksgiving this year.
Also, I make a fabulous tofu-pumpkin pie. My extended family likes it too. Blend a can of pumpkin with 3/4 a package of soft silken tofu. Mix in 3/4 cup sugar and your spices and bake in a pie shell (normal temp and time as a regular pie, I think). Its so simple and so yummy!
Six years ago the turkey set there untouched. However, the potatoes, green beans, corn, biscuits, and all other sides were eaten. Was it that the turkey was cooked wrong. No! My boys decided that they liked the fixin's the best. Have I made a turkey since then...Nope. But I make about 4 lbs of potatoes and 7 other sides. Anyway, we like just sitting down together and talking.
Tofurky, with some other kind of vegetarian gravy (the Tofurky brand is overpriced and not all that great; Roads End Organics makes powdered gravy mixes that are better and cost less than $1). And cranberry sauce.
