This is the first time posting to this board but I have been reading since I would like to eat vegetarian dishes. Thank you for all the tasty dishes I have read about, which I will be trying soon!

Today I put together this dish which actually tasted good!

1 lb. package of frozen chopped kale
2 cans of broth (I only had chicken which is a no, but will be buying veg)
1/2 package frozen Morning Star Crumbles
re-dehydrated garlic, minced onion, veggi flakes (didn't have fresh)
dried red pepper flakes, salt, pepper - to taste

Just threw in the pot and boiled for 10 minutes. Very tasty for me!

What could I make on the side since now an hour later I am hungry. I want to also try gluten free since I have fibromyalgia and dr said I should try that type of eating!

I would have served that a baked sweet potato with some sort of fat added (a pat or two of butter on top, or cook the rice with some butter or olive oil, or chopped avocado or nuts as a garnish). It looks like a good meal, but it wouldn't hold you very long without more fat & fiber.
