I'm not a vegetarian, but on days I want a change of pace, I use cut-up mushrooms. I just cut them into small pieces, then fry them in unrefined sunflower oil with chopped garlic. They have an earthy flavor that makes for a good stand-in for meat, especially with starchy vegetables. Do not discard the oil, either; you can use it as a sauce.
Also, I once bought fake bacon salt, that tasted close to the real thing. Not only was it vegan, it was even kosher. (Some schools of thought prohibit it, under the logic that it tastes like a non-kosher product.) Unfortunately, I forgot the brand name, and haven't been able to get my hands on it ever since.
