* cooked oats lowers GI as you know
* what about soaked oats, does it lower GI
* does it count as chemically/biologically cooked?

not sure what something that counts as 'cooked' means

When you cook oats in water, that lowers their glycemic index. Soaking them in water would do exactly the same thing. Either way you're just adding water.

so the water is what lowers the GI?

nothing else in the oats changes?

From what I understand, rolled, steal cut, or quick oats are generally not raw to begin with, as there is a steaming/pressing process before they even hit the stores. Oat groats is the whole oat kernal/seed and is generally raw?

I don't know anything about the GI aspect.

It is the fiber that lowers GI. Any fiber will lower the GI. Raw oats would have the same fiber. But there is something else about whole oats besides fiber because they are proven to also lower cholesterol.
