I like rice and beans but beans and cornbread is more my style. I put potatoes and cumin, onions, garlic and chopped tomatoes in the beans, and make the cornbread with a little more yellow cornmeal than flour and soaked, ground flaxseed instead of eggs. Soy margarine on the cornbread. You can make an acidic chow-chow and serve with vegan coleslaw. Vegan beer, vegan oatmeal cookies. You can get very fat on this stuff if you don't watch it.

Mine are vegan, and I make up a huge batch of beans and rice and throw in a ton of veggies and sometimes other legumes, then I'll use this mix for tacos with homemade corn tortillas every day.

I add some ground flax seed and turmeric for health reasons, and usually add chopped spinach for iron, etc., chopped jalapenos, and tons of veggies like onions, squash, canned tomatoes, corn, carrots, spices like cumin, hot sauce - pretty much anything that wouldn't seem too completely weird lol. That way I know I'll get lots of veggie fiber and vitamins and minerals.

Then, I freeze the mix up in quart freezer bags, and just nuke some to put on warmed up tortillas for breakfast, lunch or dinner. It's my staple meal that I really don't get tired of.
