I'm making a nut loaf in puff pastry, roasted vegetables, and a pecan topped sweet potato bake.

The best advice I can give to new vegans or vegetarians about Thanksgiving is to get out of the mindset that there must be a main dish and sides. Your meal can be ALL sides! No need to try to mimick a traditional meal.

Good advice. And really, weren't the "sides" what was best? I always thought they were.
Thanksgiving is probably the best holiday I can think of, to show case vegetables in all their glory!

Thanksgiving was always my least favorite holiday because of the poor dead bird on the table. I have pretty much ignored it for a very long time, but last year and this year I'll be attending a vegan potluck. If that wasn't an option, I'd ignore the whole thing and enjoy a random Thursday off work.
