Thanks! I don't eat peanut or sesame but use sunflower instead. I am going to try it to make it soon. I do cook cukes. They just taste like a more mild version of zucchini.
Yes, that will work, and sunflower is actually what I have in the house at the moment, so that's what I would use.
If you want to taste the vegan egg salad like normal egg salad, use medium firm tofu, some vegan mayo, turmeric to make it look like a egg salad and the special ingredient - black salt. The black Salt often used in Asian household and it tastes like sulfur lil bit. And the best part is black salt and vegan homemade mayo mixture tastes similar to egg salad. Give it a try you will surprise with the taste for sure!
I've made vegan egg salad with tofu numerous times, and it's virtually indistinguishable from actual egg salad. The only thing I do different is freeze, defrost and squeeze out as much water as possible from the tofu for a meatier texture but it's not critical.
Why not just boil the eggs and add mayo with some seasonings if you want to jazz it up?
Eggs are not eating animal.

I had some good "egg salad" made with tofu. It had vegan mayo and dill and mustard. Was pretty tasty.
There was a chain here in NJ called Dean's Natural Market, not a big chain, but they had a few stores, one near me. It disappeared during COVID. They had some good premade food in addition to groceries. Used to like their Tofu with Thai chili pepper sauce and sauteed sweet peppers.

There are all sorts of homemade veggie soup recipes. My favorite is Solyanka. I learned to love it while I was traveling in the Soviet Union. Most versions have a lot of meat but there are vegan versions, especially featuring mushrooms. Such as this one: https://www.lavenderandmacarons.com/...rian-solyanka/
Solyanka pushes all my buttons as it is salty and sour, yet filling. It has pickles, lemons, capers, olives etc. It can be made sweeter by adding dried fruit, as some Europeans do. I've had versions that incorporated dried plums, which add a wonderful depth of flavor. It's perfection if you have a big chunk of Russian peasant bread to go with it. I haven't quite mastered the art of making that (yet), but there's a Russian bakery near where I work, so I can get it fresh.
OP, are you asking because you think not eating eggs is vegan? If yes, why?
I have to ask to be sure because I know someone who is a vegetarian then I found out there is also people who are vegan. If I am understanding right vegan is more extreme.
