Hubby was and is out at drinks and movie so I took advantage of extra garlic and mushrooms!!

I had sauteed spinach, mushrooms, zucchini and garlic over a baked potato!

Today:

Pico de Gallo (fresh)and steamed asparagus (fresh)
Over a bed of steamed fingerling potatoes. Added extra olive oil & pepper.

Looks very colorful & pretty and tastes great ~ A perfect cool lunch for a 90+ degree day!

I found an old recipe I'd forgotten about while sorting through paper...

It's 100 degrees out, but I made soup! It's a nice soup for summer though

It makes the house smell HEAVENLY!


White Bean Soup with Arugula and Lemon Zest

3 cups (ehhh... give or take) dried white beans
4-5 cups of water
1.5 tsp salt
2 bay leaves
3 sprigs fresh rosemary
1 tsp freshly ground pepper
1 bunch arugula or other green (today I used beet greens cuz it's what I had)
3 T lemon zest (make it yourself)

Soak beans overnight.

Bring water, beans, salt, bay leaves and rosemary to boil.

Reduce heat to low and simmer for an hour or two, however long it takes until beans are tender.

Discard the bay leaves and rosemary.

Add pepper, arugula, and zest and continue to simmer until greens are wilted.

Serve! Or save it in the fridge for another day and reheat... it gets even better.

I didn't have fresh rosemary so I put some dried rosemary in a tea ball and simmered it, then removed. Also, I like to add a bit of Better Than Bouillion to the water.

I'll have a nice baked potato on the side.

We just picked a bunch of basil and parsley from our garden and made a batch of Pesto sauce. We had Pesto Pasta and crusty garlic bread. Yum!

Since it's been so hot here, I go kind of light on food.

Rice milk over a flax muffin baked with orange and cranberries ()! They're gluten-free, sugar-free & from a local bakery up in Washington. I added to that sliced strawberries & melon. It was so good I had it two days in a row!

Today, I'm thinking baked fingerling potatoes over mixed greens with steamed asparagus. Olive oil/vinegar dressing (love Paul Newman's version) with flax seeds on top. Sounds good to me right now, but that may change the hotter it gets outside!

Has anyone every tried brown rice bread? I bought some at Trader Joe's the other day - by far the best toast I've ever had! Try some if you can get it. Delicious~~~~
