This kid and family friendly concoction hit the spot last night -
spaghetti squash
polenta slices fried in a bit of olive oil
Paul Newman Marinara sauce
and a BIG leafy green salad with baby arugala, tomatoes, sliced red onions, cucumbers and black olives.
Very east and satisfying!

Me again and this time I fed a house full of teens and tweens - only a few vegetarian or vegan!

We had "Make Your Own Taco / Tortilla Night'
This is what I did (cooked would be untrue) I put out -

` Hard corn tacos and flour tortillas
- shredded iceberg lettuce
- diced tomatoes
- vegetarian chili mix - prepared with half the liquid - or your fave meat analogue
- dicesd avocado
- vegan cheese such as Diya Cheddar (from Whole Foods) or the cheese of your choice ir both.
- vegan and non vegan "sour cream"
- salsa
NAPKINS! LOTS of NAPKINS!
and thats it guys! the kids had fun! For desert? Watermelon!
Even the carnivores left happy and full!

I just made a delicious lentil soup with lentils, canned tomatoes, dried bolete mushrooms, dulce, onions, garlic, basil, carrots and the key to the great flavor.... Westbrae mellow white miso.

What is"dulce" ???

Tonight we go to Poland!
vegan kielbasa stir fried with onions and mushrooms ( Tofurkey brand)
homemade cabbage salad with vegan mayo, chopped Granny Smith Apples and shredded daiya cheese, finely chopped onions, carrots and celery...mmmm
- pre - shredded cabbage makes this easy!
organic apple sauce
pasta with caraway seeds and Earth Balance spread.

Ohhh I looove cabbage and may have to give this a try. Is it weird that I actually ~like~ to chop/shred the stuff?

I had vegan roasted red pepper pesto on pasta, garlic roasted brocoli, and vegan garlic bread. It was a garlic theme tonight....love garlic.

Here is the menu foe tonight -

Vegetable baked ziti made with Diaya shredded mozzarella cheese
thinly sliced summer squash, mushrooms and chopped spinach;
I mix whole wheat pasta with white pasta.
If I feel like adding ricotta i blend firm tofu with soy milk a little sea salt parsley and nutmeg.
Bakes nicely!
I use Newmans marinara and serve with garlic bread and a tossed salad.
For desert we go to the local Italian ice stand.

LOL I'm sorry, I misspelled it! DULSE- a nutritious seaweed.
