I sauteed some yellow squash with green onion, cilantro, garlic powder and adobo seasoning and served that over pasta.

Made a vegan bean chili. It came out flavorful and good! I didn't have the tvp the recipe called for so I just added a different type of bean. I also added a can of corn. I topped it with avocado and pico de gallo. Very yum!

I'm making a crudite plate w/ fresh watermelon chunks for dinner tonight because it is way too hot to cook.

organic carrot sticks, spicy black radish sticks, sweet potato chips (FoodShouldTasteGood brand..yum), pickled kalamata olives, sun dried tomato, pickled peppers and basil tomato marinated mozzerella cheese curds, fava beans and hummus. I nice balance of healthy goodies and none of it cooked. Yum.

And I'm sucking all that down w/ iced hibiscus tea.

I made a pasta salad with bowtie pasta, fresh basil, cherry tomatoes, feta cheese, pine nuts, olive oil and the juice of one lemon. Sprinkled fresh grated parmesan cheese on top.

sounds good..i make a veggie pasta with rotini, broccoli, peppers, olives, and use a little vegetable stock; add some parma cheese to taste

also i've done a cream based pasta with veggies and lemon oil (from rinds)..amazing
