Tonight I made veggie fajitas and black beans. I drained the black beans from the can, added a can of Rot-el and some fresh cilantro. Heated that up in a little pot. Then in a separate pan, spray some non-stick spray, throw in chopped onions, green and red bell peppers, a fresh garlic clove, more cilantro, a handful of mushrooms (canned works just as well), and some Boca Veggie crumbles. Mix in a little bit of chili powder, cumin, and lemon pepper for seasoning. I don't add salt, but you could if you wish. Serve them on your choice of tortillas (I use low carb) and the black beans as a side dish in their own little bowl. Fast, easy, and cheap. Packed with flavor and nutrition and it was really filling. It was delicious!

what is Rot-el? I love fajitas.

It is the Mexican version of diced tomatoes with peppers/spices in a can. Comes in hot, mild, lime etc. I always keeps cans on hand!!!

I'm making some noodles mixed with green peppers and making my own sauce creation of: olive oil, chipotle, lime, lemon, agave, sea salt, and cilantro

home made chips cut from tortillas with guac dip.

gotta have the NadaMoo chocolate ice cream to finish.

Lunch was gazpacho and bread, followed by watermelon.

Tonight is leftovers from a dinner we made Sunday for company: Mexican pasta (smoked cheese, veggie sausage, bell peppers, onion, cream sauce) and salad, followed by strawberries.

Today I baked tofu for an Asian chopped salad later in the week, as well as strawberry bread. And I also made kale chips---my new love!

Sorry for a long post. I'm new here and just excited that they are fellow veggies who enjoy good food!

Butternut squash, fresh garden salad and a fresh fruit salad for dessert. With a glass of V8 juice. The squash was so good that I ate it clear down to the skin. I don't know what I did differently from last time I made this but it was super delicious.
