Default vegan desserts

hey there,

I had two other couples over for dinner just two weeks ago.

I wanted to do something with bosc pears, I had "most" of the ingredients at home and just asked my hubby to pick up the pears, I figured that I would "figure" something out for dessert.

Well, I continued to look around online - I did not want to bake anything for 45 minutes, I did not have dry sherry etc.

Anyway, here is what I did -

cut each pear in half

took out seeds

heated pan on stove and put some vegan margarine, cinnamon, brown sugar, drop of vanilla....

let it heat up

added pears inside down

squeezed a bit of maple syrup on each and a squeeze of lemon!

put a lid on it

let those cook and served with a scoop of vegan vanilla ice cream

bit of cinnamon for garnish

it was perfect!

all cleaned their plates!

I imagine I'd clean MY plate, too !!! It sounds wonderful !!!

That does sound really yummy! I usually make an "exotic fruit salad", with pineapple, kiwi, pomegranate etc. drizzle a bit of agave syrup on top and serve with vegan "ice cream" too. Another favorite is a vegan key lime pie!

I got this from Shape magazine, of all the meat-and-cheese-happy places:

Slice an apple in half lengthwise. Cut out the core from each half. Place 1/2 teaspoon of brown sugar or the equivalent in the hole left in each apple half, and sprinkle cinnamon liberally over the whole cut surface. Place the apple halves face up in a microwaveable dish, cover and nuke 3 minutes.

Put in a nice serving bowl and plop a tablespoon of vanilla Tofutti on top. Pour the delicious cinnamon-brown-sugar-apple liqueur formed in the bottom on the microwave dish over all before serving.

Here's a great vegan no-bake cookie recipe. Kids really love these!

4 cups Rice Krispies cereal
1-1/2 cup peanut butter
1 cup light Karo (corn) syrup
1 cup sugar

- Put Rice Krispies in a large mixing bowl
- Combine corn syrup and sugar in a saucepan and bring to a boil (stirring constantly)
- Remove corn syrup mixture from stove, and add peanut butter...blend well
- Pour peanut butter mixture over Rice Krispies and mix until cereal is completely coated
- Spread mixture in large glass baking dish and let set for at least 4 hours.
- Cut into squares
