anyone have a good vegan macaroni salad recipe?

I'll look in some of my cookbooks for you tonight. However, you could probably substitute the Vegeanaise for mayo in your usual recipe. I know in my area, it's very easy to find the Vegenaise (Vegan Mayo.)

use avacado for the binder instead of mayo . also I would use whole wheat macaroni instead of the plain muellers . It does work .

From Veganomicon:

Dressing
3/4 cup Vegenaise
1/4 cup white vinegar
1 tablespoon sugar
3/4 teaspoon salt
Several pinches of freshly ground black pepper

Salad
1/2 cup frozen peas, thawed
2 average-size red radishes, grated
2 average-size carrots, peeled and grated
1 (1-pound) package elbow macaroni - makes about 3 cups

Combine dressing ingrediants and mix until blended. Add radishes, carrots and peas. Cook macaroni, drain, and then transfer into the bowl with the other ingredients. Cover and refrigerate.

I've been using plain yogurt as a substitute for mayo in recipes, and so far, I have been pleased with the results.

avocado sounds lovely!

the vcon recipe is good.

i just kinda wing it with vegenaise (no other vegan mayo will do), nutritional yeast, mustard, vinegar, and various vegetables.
