Just moved to Vermont (Burlington) and looking to explore the singles scene here. What are some good spots to meet single older women (30+) in Vermont and the Burlington area?

exactly what I thought! If 30+ is older, I guess I'm ancient. Or dead. Or something.

Try Meetup - find groups that do activities you enjoy and you'll meet someone who you know has at least one shared interest.

Don't do it, period. You don't need the aggravation.

Check out the traditional dance community. Lots of contra dancers are women this age (along with some older, and some younger), and beginner dancers are always welcome. This community tends to be well-educated, musical, somewhat Bohemian, mostly on the liberal side, articulate, and intelligent.

Groups of dancers may go out for beer and a snack afterwards, but no alcohol is present at the dances themselves. Dances are single, couple, and family-friendly and dates are not required. Wear comfortable, cool clothing and flat shoes that won't come off - contra tends to be vigorous.

Contra descends from old-time square dancing, and is done with a caller who will tell you what figures come next, and usually to live traditional music. Often the dance itself is preceded by a beginners' session, to teach the basics. It's better for beginners to dance with experienced dancers, rather than with other beginners. Although you'll have a partner (which changes for each dance), you'll also be dancing with everyone else in your set, so it's a good way to make new acquaintances who might turn into new friends.

Most communities have weekly or monthly dances - some more frequent. Vermont is filled with contra and other forms of traditional dance. Check the Country Dance and Song Society of America's website (sorry, computer won't let me link) for locations, dances and local contacts.
