Another idea for the OP would be Stowe. It's more "romantic" than Killington. There is still lots do do. Lots of nice hotels/resorts and good restaurants. If you are coming from Florida you can fly into Burlington International (BTV), rent a car, and be in Stowe in under an hour. The Killington area is a bit more of a drive from a major airport.
Stowe Mountain Resort, Stowe, Vermont - Skiing and Snowboarding at Vermont's best ski vacation resort and Official Guide to Stowe Vermont: Skiing & Vacations – Resorts, Hotels, Lodging, Dining, Golf are 2 good sites for STowe info.

And in keeping with romance -- a moonlit, horse drawn sleigh ride!

Yeah, just be prepared to pay for it! (in Stowe anyway)

I would suggest the West Mountain Inn in Arlington, Vermont. Kind of isolated but that allows the time needed for you to become familiar with each other.
Forget the distractions at the ski resorts etc. Concentrate on her.

Or you can be one of those chumps skiing behind their girlfriend, with a grumpy look on their face, just wishing they could go faster than she skis.

We just discovered Sullys. Got a wonderful meal at amazingly low price. We will definitely go back there.
Hey, are there any good restaurants in Hinesburg area? What about that one up past the car wash?

Hinesburg - Our favorite is the Good Times Cafe. It's right on Route 116 at the sharp corner. Papa Nicks is the restaurant I think you are referring to. It's next to the car wash. It's good, but I like Good Times better.
Yikes..this is just a TAD off topic LOL. Hinesburg is not a place I'd recommend taking your significant other to "woo" her .

I'll suggest the Mountain Top Inn in Chittenden. Very nice and romantic. Awesome views, snowshoeing and x-c skiing. Killington is not far for alpine skiing. It's abit pricey but isn't she worth it? A nice room in the lodge is the best value.
