Bees Knees offers good local flavor
If you're passing through Morrisville I'd recommend a stop at the Bees Knees on Main Street. It's a great cafe/restaurant that serves breakfast, lunch and dinner with a menu focused on locally produced food.
For breakfast you can have a made-to-order omlette served with Elmore Mountain bread, oven-baked French toast that rivals the most decadent bread pudding, freshly baked muffins and great Vermont-roasted coffee, among other things.
The lunch and dinner menus offer something for everyone, from vegans to carnivores. The salads featuring vegetables from Pete's Greens and local cheeses are particularly yummy. And, if you just want a snack you can enjoy a beer from Rock Art Brewery or Otter Creek along with homemade nachos, hand-cut fries, or amazing spinach and artichoke dips.
Prices are very reasonable and the atmosphere is casual and friendly. Most evenings there's live music from local bands.

If you're looking to spend a little money, Cafe Provence in Brandon has some amazing food and deserts. Cafe Provence
It tends to attract tourists though, so if you're looking for something a little more laid-back try Sully's or Cattails as Duff mentioned.

Panasian (Chinese, Japanese)
Panda North (Chinese, Japanese)
Thai Bamboo (Thai)
Brattleboro Food Co-op deli (fresh well-prepared healthy food. There is a small dining area)
Shin-La (Korean, Japanese).
Cafe Lotus (great cafe ambience. Writers write there. Simple food. Some Thai food)
Amy's Bakery Arts Cafe (a bakery, but they make great soup and sandwiches)
Chelsea Royal Diner (iconic local eatery. Nice atmostphere with great wooden booths. Great cobbler. I had a special with a turkey burger, which was too salty for me.)
Vermont Country Deli (take-out only, nice, semi-gourmet food, well-prepared. Perhaps a little touristy.)
In Putney:
The Front Porch Cafe (gourmet, nice, warm atmostphere)
Putney Diner (simple diner food. Limited menu, but I believe their cakes and pies are home-made. Yummy)
In Guilford: you can get good, unpretentious sandwiches at the Guilford Country Store, but for take-out only.
Other well-known places in Brattleboro, but which I haven't been to yet:
Adagio (Italian)
Buckley's (gourmet, very expensive, price fixe. Abut $40 per plate)
Alici's Bistro (gourmet, very expensive)
There are lots of other places, from franchise places to "fine dining".
There's another Thai restaurant, which is supposed to be good. There is an Indian restaurant, whose name I foreget. I ate there. Pretty good.
I do enjoy eating out. But I'm eating at home more. It saves money and it gives me more control over what is on my plate. And I enjoy experimenting. Today, for example, I had rice noodles and black beans, with a mixture of hoisin sauce and pesto sauce. The sauce mixture seemed to work, believe it or not.
BTW, I don't usually experiment when I entertain, though. I stick to tried and true recipes.

TKLN, We've been meaning to try Hen of the Wood, and your 'review' just pushed me into 'gonna do it' mode. Next visit to VT will include a dinner there.

We've done this before but I always like these posts.
Marco's South Burlington.-not much atmosphere but great food and hands down the best bargain in the Burlington area. Great Pizza AND sandwiches.
I also love The Bobcat and Alchemist. Just far enough from Burlington for the real Vermonters feel.
Good Times Cafe Hinesburg. Great pizza and they often have McNeils Ales on Tap.
I went to the Single Pebble once and thought it was the saltiest food I ever had. Maybe an off night.
Meyers Bagels Soth Burlington-I like these bagles more than Montreal bagels. They seem to have closed their cafe and bakery and I pray they don't go out of business.
Red Onion-Burlington- great sandwiches. Sadly, their owner just died.
Four Corners of the Earth Deli-Burlington-sandwiches from all over the world. Casual funky atmosphere.
Fresh Market Burlington - IMO the best prepared takeout food in Burlington. Their bakery has the best desserts I've ever had. We've had two takeout thanksgiving dinners from there and they were unbelievable. I got a filet mignon dinner to take home once and it was bigger and better than fifty dollar steaks I've had at steakhouses. I really can not say enough about their bakery desserts.
Anything with Red Hen bread.
Hen in the Woods? Sounds good but I'd have to sell my house and get a loan for the rest.

I forgot to mention the Marina. Good simple, basic food. Burgers, etc. Only open in the warmer months. A Brattleboro hangout.
And there's a small grill place near the Marina. It's on Putney Road, on the same side as the entrance to the Marina. I forget its name. I'm told it is very good.

I love Eaton's Sugar House in Royalton. Best pancakes in the state. Just off the interstate. You might think it touristy, but it's not.

Agreed on all counts! I LOVE this place. Not only is the food delicious, homemade, and sourced locally as much as possible, but the staff have been super nice every time I've been there.
