A sort of random question but I am looking for a regionally made (prefer to stay away from large corporation Wisconsin) dry (not fresh) mozzarella cheese.

I know Cabot makes some, but they are only sold in 6oz packs - clearly Cheddar is their thing.

Can anyone recommend any names? It does not NEED to be from Vermont, but something from New England or even Mid Atlantic is ok. The goal is basically that it comes from closer to home and from a smaller company.

Don't know if they have dry, as the website lists only
fresh. You could call and ask:
Bufala di Vermont | water buffalo cheese, yogurt, and specialty meats

Again, they mention only fresh but I'd ask -- they might know who sells dry:

Bufala di Vermont | water buffalo cheese, yogurt, and specialty meats This company no longer is making mozzarella. A freind bought some of their water buffalo up near Swanton.

Sure they are. They're at the Rutland Farmers Market every week selling it. I thought I saw them there on Saturday.

I read an article recently that they are still making it, but they moved all production and the buffaloes to Canada...just north of the border. The farm in South Woodstock will have lamb now, or something like that.
