Red Faction Guerilla was a lot of fun. One of the best sandbox games I've played was Mercenaries for the ps2/xbox, that game was just fun, and I liked how the missions let you do them in a lot of different ways, whereas in GTA games usually you really only have one way to do them and maybe another way to exploit some glitch to do them. But without a backwards compatible ps3 you wouldn't be able to play it.
Might also want to check out Yakuza 3 for ps3, it's fun though not quite as good for its time as the first two were on the ps2. It's kind of like GTA, very story heavy, you basically go around beating dudes up...it's maybe kind of an acquired taste though. Yakuza 4 is coming out soon too.
I guess you have a backwards-compatible ps2, my newer one can't do it.

Dynasty Warriors 4 Empires (hands down the best DW game I've played, the others I've tried were crap, this one is a lot of fun)
God Hand (really tough though)
