In terms of jump in quality of presentation, storyline, controls, and general overall epicness from the previous version, probably Grand Theft Auto 3

Assassins Creed 2 was a big step up from the orginal--and really was the highpoint of the series(along with Brotherhood)...

But yeah, Street Fighter 2 was huge. I don't even really remember the original Street Fighter, SF2 was a huge deal circa 1992. Even more so than Mortal Kombat, it really influenced a whole generation of fighting games...

I was a big fan of the original Street Fighter but it was limited to only two playable characters which was Ken and Ryu. Street Fighter 2 took it to another level.

A lot of games improved on their second installment - Elder Scrolls, Assassin's Creed, Fallout, Tecmo Bowl, etc.
