There are lots of little shacks/stands on the side of the road during late summer/early fall for the following items: - Filberts (also known as Hazelnuts)
- Sweet Corn
- Bing cherries
- apples, of course
- Walla Walla sweet onions
I'm sure I'm missing a ton of items, but these are my favorites.

In a nod to Washington's large Scandinavian-origin populace, I nominate lutefisk!
It makes everything else you decide to eat seem delicious in comparison!

Milkshakes at the Longshoreman in Brinnon
Blackberry pie at Copper Creek Kitchen (and their fries are great, too)

Red Mill burgers

Except Tacoma's lutefisk supplier just closed it's doors. Johnny's Ocean Fish Co on Dock st downtown was THE place to get seafood (not a restaurant--to take home and cook). That place in and of itself was a WA must.
I'm also thinking of:
Dicks
Wallingford Pizza House's pizza in a bowl
Hot buttered rum base made by a local woman found at the Red Apple market in Chelan in the winter
Frugals in Parkland
Pick-Quik in Fife
There's a place in Pike Place that makes fruit leathers and candied nuts that are to die for (orange almonds), I can't remember the name though.
