Washington food that people "must try"
Okay, looking to get more into the native cuisine. I already like the WA wines from Columbia Valley and other places here, but I was wondering, what local food is "must try" while in Washington.
Salmon, check; digging it.
Geoduck -- still not certain; they look, err, nevermind.
Apples -- check; yummy.
Razor clams -- where? I hear they're a big deal.
I need to broaden this list -- not looking for specific restaurants (but welcome) but type of food.

Oysters
Penn Cove Mussells
Sweet Cherries
Walla Walla Sweet Onions

Ranier Cherries bought on the side of the road.
Applets and Cottlets, I don't even know what this is - but we used to get it as gifts from our WA family members before we ever moved there.

Local, boutique, small-batch cheeses -- some from western WA, more from western Oregon.

Hey Allforcats - I was gonna say cheese, too! I have recently discovered Beecher's handcrafted cheeses that are distributed here in Spokane but made in Seattle. You need a really good cheese to go with the wonderful Washington wines

Sometimes location is just as important as the food...
Oysters on Chuckanut Drive or Brady's Oysters
Crab off the Westport Marina
Crab from Nelson's Crab in Tokeland
Cranberry's right off the bog (baked, jellied, and fixed every which way) in October in Grayland
Applets and Cotlets fresh from their factory
Fresh picked berries (of all kinds) from the farms in Carnation
Beechers Cheese at Pike's Market
Fresh fish (tuna, halibut, salmon) right off the docks in the Westport Marina

The Half moon Bay Bar and Grill serves razor clams as a special during every clam dig weekend. Or you can catch and cook them yourself (check the WDFW website for upcoming digs and rules).
I have seen them for sale (cleaned and ready to cook) at Michael's Meat Market on the main drag as you come into Aberdeen (across from Westport)
