I am spending the next semester abroad in France, but am currently looking for a work placement.. looking for somewhere in south France along the Mediterranean coast hopefully, but there is not much to look for :/

Aren't you looking for an internship in your field, one that must be approved by your university?
You'd certainly be hired as a waiter if you speak enough of the local language. I think you mentioned you spoke decent French before and you have experience. You could do that next summer, though you might not want to go abroad to work as a waiter.
