I like greek summers for being sunny and dry, but they're a bit too hot!

Yes in most locations summers are dry and hot, in other regions are hot and humid and in other are just warm. Some regions have some thunderstorms in summer some others usually not receive rain in summer. We have it all just like Italy. :P Quantity of climates!

B. Summers are not too hot, but winters can get quite cold, I don't want any chance of frost or snow

In Limnos there are 6 days of snowfall (when we say snow here we mean only snow not sleet). in Thessaloniki the climate is strange. In the airport of Thessaloniki there are 6,5 days of snow and at the center of the city there are 8,2 days of snow. It can snow in the west suburbs for example and in the east suburbs can have only clouds or rain. :P That 's why I said that the city have on average 6-8 days with snowfalls. The snowiest city in Greece is Florina with 27 days of snow and above 30 snowlying days per year. It can snow even in October there some times or in May but is infrequent in these months. In my homecity Serres there are on average 7 days of snow. My city is near Thessaloniki. In Ioannina there are 6,3 days of snow the other place I live. Each city has its own climate here. :P

B- To dry during May and September, to wet in November and December. Other than that Temps are great all year round and being in Greece I suspect the sunshine levels will be high...

Yes in this location to the South the sunshine I suppose that is between 2600-2900 hours. I will search about it if there is something that shows the sunshine in Patras.
