Probably Perth because of warmer winters but both are very nice. The main downside of Perth would be there's relatively more day-to-day variation in summer (although not as extreme as Adelaide or Melbourne in this regard).
Nimes would probably be the hottest city in France?
Both climates are pretty good honestly, I wouldn't place them on my favorite list but they beat a lot of other places. I'll take Nimes because I'd wager that it has a greater number of comfortable days during fall, spring, and even the summer at times.
Toulons is a very stable climate, there is not a lot of weather events.
