Nowhere in the Caribbean in winter is ever "too hot," imho.
So probably any Caribbean location that typically gets tradewinds in the summer would be the most temperate.
(as summer is typically a muggier time of year)
SOme say that the northern coast of NSW has the "best" climate in the world. With summer day/night temps of 20/27, winter about 9/19 and frequent sunshine with lots of storms, I can dig it.
But then since all this stuff is purely subjective - and of very little informational value, I could pick Salvador in Brazil - warm but not oppressively hot all year, somewhat humid, nice breezes off the ocean, no dry season, 2500 hrs of sunshine.
The message to whiners: try being a bit more flexible.

Even the Bahamas are far too cool in winter to be considered to have the world's best climate, IMHO.
Puerto Rico? Not quite, but it's a lot closer to "perfect" than the Bahamas are.
The coolest winter high that I might consider "perfect" is 29 C.

Seeing you like the consistently sunny, warm and dry weather, the NC may not be for you as there's been in recent years an increase in flooding rains. It's not exactly that sunny either during summers - autumns. I've spent quite a lot of time up there, one time during December/January over the course of two weeks, all it did was rain and rain for days on end, didn't get much sun either come to think of it. Another time in February, the temperatures dropped below 10oC over the course of a week with fog and mist. This can occur in any month but to an lesser extent during Spring which is usually regarded as the best season in terms of good weather over the NC region.
