Sounds like you've gotten a lot of good information here. I recently moved to Westchester from a very cute town in Long Island that was very walkable. Before that I lived in Mahattan and didn't even own a car. I'm in Cortlandt Manor now, near Peekskill, and where I am - almost nothing is walkable. At times, I really miss the walking. But I got used to it. I think a lot of people, if they want to walk it, drive to town, park their car, then do things by foot.
Many towns have a center, but most don't have a huge amount of destinations that you would normally go to town for, in my opinion. A good town center has a great coffee house, of course. And a pizza joint, and a bank, etc. But not a lot of places have a center that you could just relax and window shop. Yorktown has a big center of town that does have a lot, I think, but the 'center' of YT is pretty spread out, and it definitely doesn't have the 'old home town' feel where you'd bring friends and just walk around. Someone above mentioned Katonah - very cute town! Also Mt. Kisco has a really nice Main St. I love Croton, too (great feel, but less to do), plus Croton has the big train station with an express train to Grand Central in Manhattan in about 45 minutes. And, if you like the very diverse areas, you might like Peekskill. Peekskill is very historic - it used to be a popular and bustling area, but it lost its luster, in my opinion, several decades ago. It would be wonderful if it could gain some of its charm back and businesses would move back in, but most of the people that I talk with say this probably will not happen.
Of course, you probably know, that when any home is walking distance to a center of town that has anything to offer, the listing price of the home will probably reflect that. Definitely you'll pay more for a nice place walking distance to Katonah center or the center of Croton than you will for a place in Yorktown just 5 minutes drive from Main St. (Commerce St.)
