Your questions are really difficult to answer because weather and conditions can vary so widely from day to day and in different geographic areas. "Day after it rains" can be great some days and awful others. My best advice is to closely watch ski area web cams and conditions reports for the ski area(s) you want to go to.

Sapphire is teeny and because of elevation (1,400' lower at its base than Cataloochee) & where it's located, I'd guess that conditions tend to be marginal more of the time. I think that Cataloochee is your best bet.

Snow Reports - NCSAA

As for night skiing, I haven't done it in quite a while. Snowmaking is more likely to be in progress once the sun goes down and temps drop. Depending on the ski area, terrain is usually more limited at night due to location of lights. However, you have to realize that I'm in a relatively unique situation. We live less than 5 miles from Sugar Mountain and don't have "day jobs" in the winter. We can run over to Sugar any given morning, ski 2-3 hours, and be done for the day.
