My partner and I are taking a road trip to Asheville in December (Dec. 28 - Jan 2)
We'll be driving from Miami, FL
What should we expect in terms of weather? Should we be concerned about snow? And if so, would we need snow chains? I have a front-wheel drive car (Jeep Renegade).
What are some things we could do? We're big outdoorsy people, so hiking, fishing and sightseeing is something we really enjoy doing.
Average high temp for late December is about 50, but it could be 30 or it could be 70. Of, course, higher elevations will be cooler. If its normally weather or a little warmer, you should be able to do some hiking, especially at lower elevations. Dupont State Forest might be a good option. Snow would certainly not be unheard of.

Could have some snow, or sunny with warm temps...impossible to predict, though snow at elevations under 4,000 ft that sticks for more than an hour is rare in December. As BC1960 noted, it is very difficult to predict two months out, and the conditions are very altitude dependent...Chains?! Our private road snowplow man uses them maybe once per winter, but our road is at almost 5,000 ft, and it only happens rarely in Feb or March. You should be fine with your Jeep, even just FrontWheelDrive.

If Blue Ridge Parkway is open, (at least sections near Asheville), lots of good views, hiking opportunities though be aware of very changeable/much colder weather at higher altitudes.
Trout fishing, both wild native and stocked streams are open in late December, though their appetites may be considerably suppressed. See threads for Trout Fishing links...
