The best museums are in Raleigh and well worth the drive and an overnight or two.
Hendersonville has a nice small museum of history of the area. Asheville may have one also, don't know. If you like Barnes & Noble, you can get some nice books on various areas, cities, towns, and their historical backgrounds in their 'local area books' department. Malaprops book store in downtown Asheville will also have many books about the local scene and history.

A couple of good day trips are Hot Springs and Brevard. Not the same day of course.
There's a place in Hot springs where the waters are pumped into outdoor spas. Several of BBQ restaurants and then Magnolia Manor has an amazing gourmet restaurant.
Brevard is the land of waterfalls and the visitor center will provide a guide. The Square Root is an great restaurant tucked away in an alley.
There's a great museum in Cherokee. The Oconoluftee visitor center is nearby in the smokies. It is an recreated pioneer homestead.
If the OP is coming from Gaston County and wants a shorter trip, there are some neat areas around Polk and Rutherford counties. Plus it's warmer this time of year compared to the higher elevations, but you still get the mountain views.
Pearson's Falls was already mentioned.
Saluda, Tryon, Chimney Rock and Lake Lure. Tryon International Equestrian Center
Drive up White Oak Mountain near Columbus. View Shunkawauken Falls on the way up. On one side of the mountain you can see upstate South Carolina and all the way to Charlotte on a clear day. On the other side, you can see from Mt. Pisgah to Mt. Mitchell.
Great place to learn about the history of the area. If the OP has time, and the schedule is such, you can view the memorable movie "Trail of Tears". Shown in the museum theatre.
If it were spring, summer, or fall would also take a drive into Johnson City area of TN. That is a very beautiful area of the country.
We must have missed something when we passed through Johnson City.
