Altitude, not for everyone I understand, but the Reqs and Needs seem to fade for many drive bys, esp when one is not familiar with 'western NC', and 1000 to 1500 ft vs 3,000/4,000 ft and higher difference in 'summer', which seems to last for a few more months than a couple of decades ago, at every altitude.

I’m originally from NYC but hate the snow and cold and heavy traffic.
Lived in Camas Washington, it drizzle and cloudy year long, now in Sanford Fl. and it feels like 90 degrees year long. So I’m looking for acreage with a home so our dogs can run, dont want close by neighbors. Im hoping a city in NC that it rains less, and not so cold in the winters, ideally in the $200,000 - 300,000 range. I’m a Family Therapist and would like my practice there close by, my husband travels in the Charlotte/Raliegh and Florence area which he drives to. I would love decent restaurants and shopping within 20 min drive.
I know, lot to ask for. So I need names of cities like that where I can search for real estate regularly, thanks to all.

Bottom line (imo) , close to a city for your practice, price range, and hubby's travel for work, with acreage -- mountain areas won't work for you and hubby Jacqueline. You want to think about being further east, probably somewhere within an hour of Charlotte or within an hour of Raleigh. www.realtor.com is your friend at this point. Best wishes.
We live outside of Lenoir in Caldwell county on 5 acres in a 1600 sy.ft. house,my dogs get to run around the property without any issues,even though we got neighbors,you can’t see them or hear them. One log cabin in the same neighborhood on 10 acres just recently sold for 270K,which is quite reasonable compared to some other areas in western NC. It’s about 30 Minutes from Boone in one direction and 30 Minutes from Hickory in the other direction. My husband works in Charlotte and surrounding areas.

Caldwell County extends all the way up to Blowing Rock,however the closer you actually get to the town itself the more expensive it gets.
