Default Absentee Ballot

We are always away on the 1st week in nov so I asked for Absentee ballots. While reading the directions it says we need two witnesses. I have never heard of that since the last two States that we have used them never required any witnesses. This will not be a problem but it adds just one more thing that has made voting in NC a headache. I really want to know why NC makes it more difficult to vote.

Why go through all of that when you can vote in person anytime from October 16th-November 1?
