I also disagree with most of the comments here. I assume that your job might be a professional environment. And yes, we are all human. But as alphamale suggested, your feelings about your evaluation, as well as your boss's opinion of what ethnic group resembles what, have no place in a professional environment. After-hours, maybe at Fridays, or later at home, we can let our political correctness down and laugh it off. But not in mixed company at work, when the chat and focus should be job related.

Personally I don't find jokes about race funny in any environment, not because they're un-PC but because they're tired, overused and cliched.

Again, there's a difference between an off-the-wall comment about how Peter thought everyone looked like Jackie Chan in an episode of family guy that you watched together and oh my god whitey said something that could possibly be construed as racist, and now I'm going to quit somebody call the whambulance.
Discussing a Family Guy episode that you watched together while you are at work is probably not the greatest idea in the world. Threatening to quit your job because your interpretation of said Family Guy episode was different than your manager and that means he's racist... hilarious. That white people have never oppressed other white people in the last two hundred years and therefore are incapable of understanding how stereotypes are hurtful to some... Well, race blinders are obviously not exclusive to the white folk.

And people shell out good money to those comedians. Of course it's funny. People need to lighten up, laugh a little, see why some of the stereotypes exist. Also they are a part of the assimilation process so it's all good.
