If you were working in an at will state, and the "new" employee handbook just acknowledged that .... then it was already a term of your employment by definition. The employer really didn't need your consent to that condition of employment as it already existed and they could fire you anyway.
If it wasn't an at will state, and they were now asking you to accept at will terms (which have concerns re UI and other employer responsibilities) of employment, then it wouldn't have been correct to ask you to sign away your rights as a condition of continued employment.

Exactly right.....at least in my mind [which is sometimes lost]
If you have a signed contract stating your salery for the next 2 years can the company say you must take a pay cut and give up your stated raise immediately
