After looking for work for over a year after undergrad and grad...I'm going back to school for another (better) undergrad degree. When I write my new resume how should I list the education?

BS Degree Z, 2013
MBA Degree Y, 2012
BS Degree X, 2011

Or leave off the X and Y degrees all together?

I'm going back and doing an accounting degree. Found an office where I can work part-time for the next year doing their books like I did for my volunteer position but this time I get paid for it. I found out that I can take the CPA exam as soon as I move to Washington next year (or finish the program if I move earlier).

Avoid the questions. Just come out with it. "B.S., X and Z, 2013".

The assumption is that you were a double major, which you are - since you only need to fill the core requirements of "Z". If they ask, that's what you tell them.
