This isn't drama. It's standing up for yourself and what's right. As an employer myself, I cannot stand when other businesses do this - it's how you end up with all these bitter people out to lie cheat and steal their way through their employment future (plenty of examples on this board.)
Do the right thing and confront this directly. They promised to pay you, they have not - no emotion, just a business transaction.

There is a piece of the story missing.
DING! DING! DING! See above. (aside: given the somewhat confused responses of the OP, I too am assuming the OP has NEVER been paid)
You do not have a job; you are unemployed. You just don't know it yet.
If they aren't paying you, they are in a serious, serious financial situation. The longer you stay, the deeper the unpaid hole will be when this place finally goes belly up. And when it does close its doors, employee wages will be the last debt to be paid, as you are an unsecured creditor. Taxes first, secured creditors second, unsecured creditors last.
Cut your losses. Stop the volunteer work and get a paying job.
I had a similar situation happen to me back in the late 80's. Checks were written, but they would bounce if you deposited them.....this was before direct deposit. I was young so I put up with it for a few weeks. It became known that going to check cashing or grocery stores were the safest ways to try and cash our checks. This was a pretty big company that had a very popular commercial in the Greater Boston area. "Call 1-800-USA-LOAN, if you're a home owner and you need a loan" was their jingle.
Anyway, things pretty much handled themselves when some guys showed up one day and started taking the computers and equipment out the door while we all were working. Luckily, I was in high school still so it didn't really have a major impact on my life. The company collapsed.
Your situation is a bit more serious. Call the Labor Department TODAY and stop working for free. Not sure what type of school this is, but I'm sure others aren't getting paid as well. Quietly ask a couple of co-workers just to be sure.
I hate confrontation, drama, & trouble. I just wouldn't want to face this lady daily at the workplace with her knowing that I reported her. If I could quit & I knew I wasn't ever going to see her again, that's another story.
Let me give you a tip, whether it is this situation, or any other situation which you may face along your journey of life:
You look people directly in the eye. You speak directly with them. You ask specific questions, and you give specific answers. You don't lie, cheat or steal, and you don't tolerate for one second people who do.

If you ever quit, you can't be guaranteed of not seeing this lady again. So I guess you have to work there forever for no pay.
