I've had recruiters and companies who knew who I was (probably LinkedIn profile) and call me at my work number, which I don't list anywhere. So how do they get the number?

Call the receptionist?
Also, google can be amazing nowadays, I've known EAs that can work magic to find unlisted numbers through linking web searches or using contacts of contact through Boards and whatnot.

Many employee numbers are listed on company websites. Once they have your name from Linkedin it's easy enough to call the receptionist and get your number. Try googling yourself, you may be surprised to see how much information about you is available, though some may make you pay a fee to get the details.
