To just answer the question - I'd say CCENT. But that's just my personal opinion. While it's not vendor agnostic, Cisco is to networking as Coke and Disney is to their industries.
That said, there are so many other factors that may make your cert of choice irrelevant (from a job hunting perspective).

I have an A+ already, and I haven't received many responses. Am looking to break back into IT, and was just wondering which cert would catch more attention.
Unless you are seeing a lot of N+ or CCENT in the positions that interest you, having those isn't going to guarantee anything. What's your relevant background/skills/accomplishments?
As you probably know, that area (network ops) has always been fairly saturated. Not trying to discourage you. But the reality is that in many cases, those certs will only matter if you are neck and neck in skills with the other guy that is applying.
Not saying you shouldn't go for the cert. But I guess I would advise you to look at what the investment will cost. If you know that stuff already, and its just a matter of throwing down $125-$270 for the exams; perhaps that's not a huge deal But if you're looking to spend $2500 on a bootcamp/voucher, then that's a different story.

I have 6 years (2001-07) in an NOC as a tape jockey, and some hands on with server equipment, rack and stack, etc.
I think I will just study N+, take some practice tests, not take the real exam, then just move into CCENT.
Cloud infrastructure seems very interesting, and still somewhat untapped, so wouldn't some network knowledge be beneficial if I eventually wanted to go into cloud?
