The best and most qualified candidate who can lie his or her ass off in a pinch. It makes me want to vomit just thinking about it.
Don't be daft. Most seasoned interviewers can see through lies in a heartbeat and, if they're not obvious, the reference checking and background check quickly exposes them. Curb that gagging reflex.

Other posters were telling the op to make up a response and/or lie. Now who is being daft?

Some people lie, but not all. But that's not the important part of this. The important part is, the hiring manager wants to know that you researched them as a company, you know who they are going in, and you're less likely to make a mistake in taking a job there than some dimwit who is simply looking for a paycheck. If you're unwilling to do the homework, it signals either denseness or laziness and you lose.
Quite frankly, I wouldn't hire most of the people who stated the response they would give because they still don't get it.
I hate this question because for a lot of jobs because it will pay me money but that's not an appropriate answer. Try to find something you like about the company or that you've read about say it interests you. I see you guys are very employee friendly, I give my company my all so appreciate the fact I'm respected and valued. I've always had an interest in the hospitality industry etc.

I don't like it either, as I stated in an earlier post. I ask candidates what they know about us. It serves the same purpose.
But as long as the question is being asked, people need to be prepared to answer it well.
Stroke their Ego while at the same time showing knowledge about the business/position, etc.
"That's a great question... I've done my research, and XXXXXX. I've also heard a lot of fantastic things about XYZ, and it seems like a great place to build a career. On the personal side, I would be closer to my family, as they live in XXXXX, and, family is important to me. It seems overall that it would be a great fit for the both of us"
Heh part of me wants to respond very matter of fact- I want this jobs because I am either unemployed or my current job sucks-you know why else would one apply to a new job? However in practice it is probably best to go with "I see this position more in line with my long term goals, I have done my research and I believe that this company etc...."
I have an interview scheduled in a couple of weeks. It would be a big pay cut.
How do you guys handle the question of why you want to work for us, or why are you looking? Particularly if you haven't been at current position for long.
Obviously I would never gripe about my current position (even though I am unhappy).
One good thing about the new position is it is much closer to my mom's place and I can better take care of her as she is old and not well.
Look at this way: As they are interviewing you, you are interviewing them too. Employers know you need a job to pay your bills and survive. But why do you want to work for THAT company? They want to know why did you choose them? What is it about that company that makes you want to work there?
Companies want enthusiastic people that will eat and breathe their business, not someone that is just doing what they can to survive because if the pay isn't up to par, you might be looking for the next job.

And I want a pet unicorn.
