I am with you Valentino, I would buy my own. Nice guys finish last, but I do believe it makes it easier to keep your chin up and know inside you are a stand up individual. I do believe in a round about way you would gain respect by being polite and refusing.
What is stand up about it? The person offered to buy you lunch, there is a reason they did.

No, you'd be looked on as a dolt. If the boss offers to cover, you politely refuse and if they insist, you say thanks and move on.
You don't gain anyone's respect by refusing a gift/offer/teambuilding. You're showing yourself to be "better" than the offerer.
OP, let yourself be happy! It's just lunch, you aren't negotiating a nuclear arms treaty.
And it's not just you, but some folks on this board seriously over think stuff. Relax, do your job, do it well, then go out and enjoy life.

I don't think the manager was trying to stage some sort of nefarious litmus test by picking up the tab. He probably figured that since the OP was taking the time to go out and grab the lunches, the least he could do was offer to pay.
I was the same way early in my career, OP, not really knowing if accepting the offer is held against me. I've learned over the years though to just accept as it's a nice gesture your Manager is doing to keep his/her team happy. So, don't worry, just enjoy your free lunch.
I always eat out for lunch at work, ....and when I asked my managers if they wanted something (three brothers) they said yes and gave me their work credit card and offered me to use their credit card to pay my lunch as well.

I used to work for this small, really "old school" company, where the boss had an actual secretary, and she would take his calls, and walk to his office and tell him who was on the phone, and do his grocery shopping, and pick up lunch for everyone in the office every day. The managers/owners always offered to buy everyone's lunch every day - the only caveat was that you had to sit there and eat lunch with them. Exactly. They know you are insulting them by effectively flipping the bird at their generosity. Pretending you are doing it out of some sense of humility or something isn't fooling anyone.
